The South Beach Diet in a Nutshell
Interested in the South Beach Diet? It uses the teaching of the Glycemic Index. MindOverPlatter.com has been teaching about this concept for years.
We refer to it as the Table of Insulin Response, it is based on the Glycemic Index. The Glycemic Index is a system that ranks how food affects your blood sugar level. Foods with a rating of 55 or lower produce a gradual rise in blood sugar, not provoking an insulin response. Foods between 55 and 70 will cause blood sugar to rise at a faster rate. The foods to avoid are the ones that rate above 70 they will quickly elevate your blood sugar and cause an insulin response.
Insulin is a fat producing hormone, it can falsely tell your liver to manufacture fat, we know what that means! Also foods high on the Table of Insulin Response will cause your body to retain fluids.
Take a look at the chart provided in our members charts section. As a general guideline consume foods with a low rating (I recommend under 59). Never have more than one food at a meal with a rating of over 70. If you do have a food with a rating over 70 combine it with a lower rated food such as veggies, cheese or protein to slow down the blood sugar raising too quickly.
Your assignment this week is to be mindful of the foods you eat and avoid the ones over 59.
